I love Mexican food and I especially love fajitas. I have seriously been missing chicken fajitas since going vegan. I decided to buy some vegan chicken strips and make me some fajitas!! These are super easy to make. Here’s what you will need:
1 chopped onion
3 julienned peppers (I used red, yellow, and orange)
1 tsp. minced garlic
1/2 cup sliced mushrooms
taco seasoning packet (made per directions)
1 package vegan chicken strips
Add a little olive oil to a frying pan and lightly sauté onions, garlic, peppers, and chicken strips. Add taco seasoning and simmer until veggies are tender crisp.
In the past when I made regular non-vegan fajitas, I would sandwich the fajita mixture between two tortillas. I would spread butter on the outside of the tortillas so I could lightly brown the fajita on a griddle. I would add cheese to the fajita mixture so the insides would hold together when flipped over. Yes, very delicious but very non-vegan! I did try to flip the vegan chicken fajitas without cheese and it just made a big mess. They were also extraordinarily messy to eat. So, I suggest rolling the fajita mixture in a tortilla like you would with a soft taco. It saves you a step and a huge mess. 🙂
I like to serve my fajitas with salsa and guacamole. And a good amount of chips are needed to scoop up all the fajita deliciousness that might escape the confines of the tortilla!
