I love pancakes. They have always been my very most favorite breakfast! Since I’ve been vegan-ish I have cut down on how often I make pancakes but I have not stopped making them or eating them. Even though there is very little egg or milk in each serving, I still feel guilty about eating them. I have been trying to figure out how to have vegan pancakes that are not made out of bananas, cashews, beans, or anything like that. I want good ol’ Bisquick pancakes. Bisquick (original) is vegan. It’s only when you start adding ingredients according to the package directions that the pancakes stop being vegan. I knew that substituting milk for non-dairy milk would be easy but I wasn’t sure what to do about the eggs. That is until I found a packaged egg substitute. Hallelujah!!
I’ll tell ya, this is a game changer for me. I am ok with many vegan substitutes or can do without many of my old non-vegan staples but darn it, eggs are kinda vital to my baking! Especially with the holidays coming up. But for now, I’m more than happy just to make vegan pancakes.
It was very simple to make these pancakes. I just followed the directions on the egg substitue package and the Bisquick package.
Then I topped the finished pancakes with my favorite toppings, vegan butter, blueberry syrup, and fresh blueberries. Then the only thing I had left to do was enjoy! And enjoy I did. 🙂 These weren’t quite the same as the non-vegan variety but still very delicious! I am so happy to start making pancakes that are quick, easy, and vegan! My waistline may not appreciate it but my tastebuds sure do!
