Today I’m going to talk about treats! If you’ve been following my blog, you’ll remember that I am vegan-ish, I am doing intermittent fasting, and I’m doing Keto.  I’ve been very happy with the results.  I have lost 8 pounds so far (in just under two weeks).  I have experienced less inflammation (my knees don’t hurt anymore!).  And my appetite has greatly diminished, I don’t have the constant carb cravings that made my tummy grumbly all the time.  I am pretty comfortable with a moderate sized salad for dinner, especially after a mid-afternoon snack, and my go-to snacks are fat bombs!

For those not familiar with what a fat bomb is, it’s just what it sounds like, a treat made up of fat (with some flavoring).  I know, I know, sounds just wrong doesn’t it?  We’ve been taught to fear fat.  All my adult life I’ve heard that I should avoid all fat at all costs. But I’m here to tell you that healthy fat is where it’s at!  My favorite healthy fats are avocado, nuts, nut butters, and coconut oil.  I can eat all but the coconut oil on their own.  I love the flavor of coconut oil but don’t like to just eat a big spoonful on it’s own.  These coconut fat bombs are much more palatable (to me at least).

Coconut Vegan Fat Bombs

1 stick vegan butter
1/2 cup coconut oil
1/4 cup unsweetened coconut flakes
1/4 tsp. vanilla extract
2 packets stevia

Bring the butter to room temperature for easier mixing. Blend all ingredients together in mixer or food processor.

You can then either place mixture into a mold (I used a mini muffin pan) or you can refrigerate until firm and then roll into balls (or you can leave in a bowl and just eat a spoonful at a time – not lazy at all, just time efficient!).

Store your fat bombs in the fridge, they are too gooey to eat otherwise, plus fat can go rancid if left out. Yields 16 servings.

* Note – you do not have to add the butter, I just like to cut the coconut flavor a little with butter flavor. You can also substitute your favorite nut butter or you can eliminate it altogether and just use the coconut oil, these will still be tasty and satisfying either way.  🙂
