Addictive Vegan Keto Ramen Soup


I have been doing the Keto diet for a week now. It’s been a challenge but a good one. It has forced me to examine a few things. Namely, if I want continue being vegan or switch to being vegetarian. I did try adding a little cream and a little cheese but quickly remembered that I’m lactose intolerant! So vegan it is!! That being said, I had to quickly become creative with my meals as Keto and vegan seem to be diametrically opposed to each other. Grr! But challenge accepted. This ramen soup is one of the dishes I have come up with. I have eaten it several nights in a row for dinner. Not because I have very limited variety of foods available to me, but because it is so addictive. It’s the broth! It’s delicate but hardy at the same time. I think I could maybe live off the broth. Especially since I’m feeling the effects of the dreaded Keto flu. 🙁

Addictive Vegan Keto Ramen Soup

2 tablespoons coconut oil
2 cups spiralized zucchini
2 cups vegetable broth
1 cup fresh spinach
1/4 cup edamame
1 tablespoon soy sauce
1/2 teaspoon ginger
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
chopped green onions for garnish

In a large saucepan melt coconut oil. Add in the zucchini and spices. Lightly sauté for a couple of minutes. Stir in broth and soy sauce. Heat through and add spinach. Cook just until spinach starts to wilt. Pour into large bowl, sprinkle with onions and serve. Serves two as an appetizer or one as a meal.

Easy, peasy! In just takes about 10 minutes to make, in fact, it takes me a lot longer to eat this Addictive Vegan Keto Ramen Soup than it does to make it 🙂 And bonus, it keeps me full all night.

**Note it was pointed out to me that my calculations were off.  My app incorrectly gave me 20 grams of protein for the veggie broth.  Silly me for not catching this!  To make this dish have more correct nutritional counts, substitute the edamame for vegan chicken strips (1 serving is 12 strips).  Add the strips in before the spiraled  zucchini or the zucchini will be overcooked.  Sorry for any inconvenience!  Thank you for your support!!
